Just yet another lousy quiz

Sunday, May 20th, 2007

But I love it!!! Being an unsophisticated person that I am, I easily fall in love with the ABG-ish thingies. Hehehe.

I’m actually trying hard to be bold, but my love for the pop culture seems to be hindering any possible progress. I do subscribe to TIME instead of WHO (Oz’s version of People mag) thou. Primarily because I read WHO mag FREELY in my local newsagent or supermarket :D.

Nuff with the nonsense, come, take my true friend quiz, my friend. Bwahahahhaa

Chocolate Kahlua Cream Cheese Brownies

Wednesday, May 2nd, 2007

The only thing that I can cook and might be actually edible by other people is… my brownies… I think. I didn’t get rave review… but at least they didn’t launch any protest.. and my lil sister love my brownies… and it’s been a while since the last time I made one… About a week ago, suddenly a craving for brownies kicked in… well.. actually not brownies… anything with booze in it to be precise. LOL. The chronological order that leads me to finally bake a brownie:

1. Mates hang out at a cool bar in the city, I came by to say hello and sniff around for some potential gossip.s.sss.ssss…. LOL. Take a sip of my mates’ cocktails… The white russian tickle my fancy… Hoho..
2. Surprise", craving for the simpletastic Midori and Sprite or Lemonade kicks in. Found heavily discounted small bottle of  Midori in Safeway Liquor, bought a bottle of Sprite and voila…!!
3. Midori and sprite no longer fun. … ah.. the white russian.. Googled around, found that it actually has Kahlua and some other stuff in it (e.g. vodka, milk, etc etc..) … I want Kahlua with milk!!!
4. Thought about it again… Kahlua and milk… nah… will be bored after the first glass of milk, not a big fan of milk… What about with ice cream??  Google other potential Kahlua contained recipes… Don’t want to buy a bottle of Kahlua only for a glass of coffee flavored milk…. Ideas! Kahlua in a brownie… lovin my friend google, got a great candidate recipe here
5. Decide to bake a pan of  Kahlua Cream Cheese Brownies… with my own version of the base brownie recipe… The Deep Dark Chocolate Brownie that is…
6. Finally baked my own version of Deep Dark Chocolate Marbled Kahlua Cream Cheese Brownie.. LOL…

Here goes the recipe:

Chocolate Kahlua Cream Cheese Brownies

Ingredients:

For Kahlua Cream Cheese Topping:
1 pkg Cream Cheese (250gr)*
5 tbsp butter (roughly 70gr)*
1/4 cup Caster Sugar
1 Egg
1 tbsp Kahlua (1 actually put 2 :p)
*)
softened at room temperature, otherwise it’ll be very hard to mix them

For Brownie:
Same ingredients and method as the Deep Dark Chocolate Brownie minus the nut option, plus Kahlua, But I’ll put it here again anyway. *I know, I’m redundant.

340 gr Semi-sweet/Dark Cooking Chocolate**
150 gr Unsalted Butter***
250 gr/ 1 1/3 cup Brown Sugar
4 egss
1 cup Cake Flour
120 gr Sour Cream
1 tsp Vanilla Powder
1/2 cup Kahlua

**) use 240 gr dark cooking choc if you want to add 100gr choc chip to your brownie
***)222gr Unsalted butter if you don’t have sour cream

Method:

Brownie:
- Butter parchment/cooking paper & dust with flour
-
Melt chocolate, stir in butter until it is melted (Some people melt
butter and chocolate together, I melt choc first and than add butter
later to prevent burning the chocolate)
- Beat the butter n choc mix, beat in sugar, add egg one at a time. Beat until mixture lightens
- Blend in flour, vanilla powder. Do not overmix
- Blend in Sour cream and Kahlua (n choc chip if u’re using any).
- Pour into baking dish/tray.

Kahlua Cream Cheese:
- Mix the cream cheese, butter, sugar, egg and Kahlua, preferably with electric mixer on low speed, until the mixture is smooth and well combined

- Spread the Cream Cheese mixture over the top of the brownie mixture evenly, and swirl it using a skewer or dinner knife to create the marbled effect. Scatter choc chip evenly if u’re using any.

- Bake at 180°C (160°C if using non stick pan) for 50-60 minutes. Be careful with fan forced fan, I don’t turn the fan speed to maximum.
- Cover pan with foil, bake again for 15-20 minutes. (or until the toothpick inserted come out clean)
- better to Refrigerate the brownie overnight before serving.

It’s important not to "burn" the brownie. The brownie should be moist… not dry and crumbly… And suggestion based on experience, it is highly recommended that you serve the brownie with Ice Cream and splash it with a lil bit of Kahlua.. Lolz.. I actually splash a lil bit of Kahlua into my Ice cream + Brownie, cuz I can’t find any trace of kahlua in my brownie.. Hehe… so you might want to adjust the amount of Kahlua for the mixture…

I’m not a professional photographer, and I don’t have any digicam, so kudos to my oldie but goodie SE K750i. Some pictures of my brownie:

pimped up brownies, served with vanilla ice cream, strawberries, and splash of Kahlua. I’m not a very artistic person, please be considerable when judging my food presentation skill. To me, as long as they look edible, I’m happy with it. Oh, and I put 2 strawberries cuz one would be very lonely. LOL

I’m lovin my every single bites of the brownie.. Hope you does with yours too!! Hehehehe

PS: I think the strawberries look like tomatoes in the picture. No? …. Hoahoahoahoa
